Sodium is one of the few nutrition topics where mainstream guidance is fairly consistent, so you can get a clear answer to the number question. What is much less clear is what any given amount means for you specifically. Here is the honest version of both halves.

The numbers, and what they actually mean

Most national guidelines for adults land in a similar place: an upper limit somewhere around 2,300 mg of sodium a day, which is roughly one level teaspoon of table salt. The World Health Organization suggests a lower figure, under 2,000 mg. Some heart-focused organizations suggest aiming lower still, nearer 1,500 mg, particularly for people who already have raised blood pressure.

Two conversions save a lot of confusion:

  • Salt is not sodium. Table salt is about 40 percent sodium by weight. To go from salt to sodium, divide by roughly 2.5; to go the other way, multiply by 2.5. A label listing 5 g of salt is describing about 2,000 mg of sodium.

It is worth being clear about what these figures are. They are population-level upper limits designed to shift the average intake of an entire country, and average intake in most high-income countries sits well above them. They are not a personal threshold where something bad happens at 2,301 mg, and they are not a target you need to hit precisely.

Sodium is not the villain, and not nothing

Sodium is essential. It carries a large share of the work in fluid balance, nerve signaling, and muscle contraction, and you cannot function without it. Very low intakes are not automatically better, and people who sweat heavily — hot climates, physical work, long endurance sessions — genuinely need more than someone sitting in an air-conditioned office.

On the other side, large reviews of sodium reduction consistently find modest average reductions in blood pressure, with bigger effects in people whose blood pressure is already high and in those who appear more salt-sensitive. There is one more wrinkle worth knowing. The eating patterns highest in sodium are usually also highest in ultra-processed food, and those two things are extremely difficult to separate in observational research. Where it actually hides

The usual heavy contributors:

  • Bread and rolls. Rarely tastes salty, eaten in quantity, and often the single largest source in an ordinary day.

How to read a label for sodium

In the US, a few label terms have legal definitions worth memorizing:

Two traps. "Reduced sodium" is relative, so a quarter less than something very salty is still salty. What cutting back may and may not do

Reducing sodium may lower blood pressure somewhat, and the average effect in research is real but usually modest. Taste adaptation: the part nobody mentions

Here is the encouraging bit. Salt preference is largely learned, and it moves. Food that tastes bland when you first ease off usually stops tasting bland after a few weeks of consistent lower intake — the timeline often quoted is somewhere between a few weeks and a couple of months. Many people then find their old normal genuinely too salty.

Things that make lower-sodium food taste like something:

  • Acid. Lemon, lime, vinegar. The most effective single substitution.
  • Heat and aromatics. Chili, black pepper, garlic, ginger, mustard.
  • Herbs, used generously. Quantities that feel excessive are usually about right.
  • Browning. Roasting, searing, and caramelizing build savory depth that salt was previously doing.

Try this for two weeks
