The category does not follow botany

Soybean oil sits at the top of every list and comes from a legume seed — the identical structure to the peanut those same lists exclude. Corn oil is pressed from the germ of a grain kernel, rice bran oil from the outer layers of one; neither is a seed in the sense anyone means by the word. Even sunflower is imprecise: the striped thing in the bag is a dry one-seeded fruit, with the seed proper inside the hull.

The category leaks the other way too. Flaxseed, hemp seed, pumpkin seed and mustard oil are seed oils under any literal reading and almost never appear on the lists. Almond oil comes from the seed inside a drupe, the same structure that makes a coconut a coconut. Cocoa butter is pressed from a seed.

None of that makes the category useless. It makes it a category built on something other than plant anatomy, and working out what that something is turns out to be the answer.

Why olive, avocado and palm oil are genuinely different

These are the cleanest cases, and they share a mechanism. The oil sits in the fleshy part of the fruit, so it can be separated mechanically — crushed, mixed, spun in a centrifuge — without solvents. Extra virgin olive oil is essentially the juice of the pulp; avocado oil is pressed much the same way; palm oil comes from the orange pulp of the oil palm fruit.

Palm makes the boundary visible, because one fruit yields two oils. Palm kernel oil is pressed from the seed inside, a seed oil in the literal sense, though it is high in saturated fat and never turns up on a list. Coconut raises the same problem: the white meat is seed tissue inside a drupe.

The four oils people argue about

Sesame oil is a seed oil by definition and rarely treated as one. It is a seasoning used in teaspoon quantities, often unrefined, with centuries of culinary use behind it. The exemption is cultural rather than chemical.

Grapeseed oil is unambiguously a seed oil, sometimes defended as a winemaking byproduct. Byproduct or not, it is among the most linoleic-acid-dense oils sold.

Rice bran oil comes from the layers stripped off when rice is milled. Whether that counts depends on where you draw the line around a grain, and lists split on it.

Peanut oil is the sharpest case. A peanut is a legume seed, structurally the same as a soybean, and refined peanut oil is a common commercial frying oil. It is left off most lists for a linguistic accident: it is called a nut.

Strip the botany away and four features do the sorting. These oils are extracted at industrial scale, usually with a solvent and then refined, bleached and deodorized. They are high in linoleic acid, the main dietary omega-6. They are cheap commodity crops, which is why they dominate restaurant fryers and packaged food. And they became abundant recently, so the amount in an average diet has changed over the past century.

The label wording that hides the answer

On a US package the ingredient may simply read "vegetable oil". American labeling practice has long allowed alternative or "and/or" declarations for fats and oils, so a package can legitimately say "vegetable oil (soybean and/or canola oil)" while the maker switches between them as commodity prices move. This particular loophole is US-specific.

European Union rules are stricter here: refined vegetable oils must carry their specific vegetable origin, so a label there reads "vegetable oils (rapeseed, palm)". The same product can be more legible in Berlin than in Boston.

If the boundary matters to you

Once the definition is clear, the useful question is quantity rather than membership.
